The Santo Domingo Cooperative was founded in 2001 and boasts a membership of 128. This coalition of small farmers produce a fantastic coffee that is grown at a high enough altitude, classifying this coffee as a Strictly Hard Bean (SHB). They all process their coffee with a traditional washed process  where the pulp of the coffee is removed and the seeds are then soaked in water to ferment the sugary mucilage off the seed. This process leads to a clean tasting coffee with narrower flavor attributes when compared to a honey or a naturally processed coffee.
